Ingredients

  • 2 Tbsp. unsalted butter
  • 2 x Golden brown Delicious or possibly Granny Smith Apples peeled, cored, and coarsely minced
  • 2 Tbsp. brown sugar - (to 3)
  • 1 pch grnd cinnamon or possibly allspice
  • 1 Tbsp. Rum or possibly water - (to 2)
  • 8 x buttery cookies crumbled (like shortbread, ginger cookies or possibly any cookie that goes well with apple) Vanilla or possibly Butter Pecan ice cream Minced walnuts or possibly pecans for garnish (optional)

Directions

  1. In a small skillet heat butter till golden brown. Add in apples, sugar and spices, 2 Tbsp. or possibly so rum (or possibly water) cover and simmer for 10 min or possibly till tender. Uncover and cook till liquid has been absorbed and apples begin to saute/fry again in butter. Remove from heat and cold slightly.
  2. To assemble: Add in half of cookie crumbs in the bottom of a ramekin or possibly dessert bowl or possibly heatproof glass, top with some apples and ice cream, build up another layer or possibly so and garnish with minced nuts.
  3. This recipe yields 2 servings.
