Honey Garlic Appetizer Meatballs

Ingredients

  • 2 lb grnd beef
  • 1 c. dry bread crumbs
  • 3/4 c. lowfat milk
  • 1/2 c. finely minced onion
  • 2 x Large eggs
  • 2 tsp salt
  • 1 Tbsp. oil
  • 3 x cloves garlic
  • 3/4 c. ketchup
  • 1/2 c. honey
  • 1/4 c. soy sauce (sodium reduced)

Directions

  1. Preheat oven to 450. Put meat in a bowl and break up. Mix together the bread crumbs, onion, lowfat milk, Large eggs, and salt. Shape meatballs into little balls (one inch maximum). Place in single layer on a jelly roll pan and bake about 10-12 min. Drain meatballs. Add in oil to saucepan and saute/fry garlic till soft.
  2. Add in the ketchup, honey and soy sauce. Bring to boil, reduce heat, cover and simmer about ten min. Add in the meatballs to your sauce, bring back to a boil and simmer uncovered for about 5 min, till sauce glazes meatballs. Stir sauce and meatballs occasionally so they do not stick.
  3. NOTES : I freeze the meatballs in advance. When using, thaw the meatballs, and make your sauce. Proceed with recipe. People really like these! They could also be a main dish (keep meatballs small) and serve with rice.
