Ingredients

  • 1/3 c. olive or possibly vegetable oil
  • 3 Tbsp. balsamic vinegar
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. finely-minced fresh basil (or possibly 2 tspns dry basil) Salt to taste Freshly-grnd black pepper to taste
  • 4 x boneless pork chops, abt 3/4" thick
  • 8 ounce Portobello mushrooms (or possibly large white stuffing mushrooms)
  • 1 pkt salad greens - (10 ounce)

Directions

  1. Make vinaigrette dressing: Whisk together oil, vinegar, mustard and basil in a small bowl till well combined. Season with salt and pepper to taste. Separate 1/4 c. dressing to baste the chops.
  2. Season chops with salt and pepper; grill or possibly broil 12 to 15 min just till done, but still moist, brushing occasionally with vinaigrette. Grill mushrooms 5 min, basting with vinaigrette. Cut pork into 1-inch cubes. Slice mushrooms into thick strips.
  3. Toss salad greens with remaining vinaigrette. Divide salad onto four plates; top with pork and mushrooms.
  4. This recipe yields 4 servings.
