Ingredients

  • 9 inch unbaked pie crust
  • 2 Large eggs, beaten
  • 1 c. white sugar
  • 1 3/4 c. Libby's pumpkin
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon allspice
  • 1/8 teaspoon cloves
  • 1/2 teaspoon pumpkin pie spice
  • 1 3/4 c. lowfat milk

Directions

  1. Preheat oven to 450 degrees. Stir Large eggs into pumpkin. Blend salt and spices with sugar. Mix into pumpkin. Gradually stir in lowfat milk till well mixed. Pour into pie shell. Cover edges of crust with aluminum foil. Bake at 450 degrees for 15 min. Reduce heat to 350 degrees and continue baking an additional 45-55 min or possibly till a sharp knife inserted in center comes out clean.
