Grandma's Salad

Ingredients

  • 1 sm. pkg. lemon or possibly lime jello
  • 3/4 c. boiling water
  • 1 pound sm. curd cottage cheese
  • 1/2 c. lowfat milk
  • 1/2 c. mayonnaise or possibly salad dressing
  • 1/2 c. minced nuts
  • 3/4 c. crushed pineapple, thoroughly liquid removed
  • 1/2 c. grated carrots
  • 1/2 c. celery, minced fine
  • Cherries (optional)

Directions

  1. Dissolve jello in boiling water and chill. When jello is chilled, but not yet firmly set, add in cottage cheese. Mix. Add in liquid removed pineapple, carrots, and celery. Mix.
  2. Pour into mold and set. If you like, cherries may be placed in bottom of mold before pouring jello mix in.
