Ingredients

  • 1 c. Buttermilk
  • 2 x Large eggs
  • 1 Tbsp. Veg. oil
  • 2 Tbsp. Brown Sugar
  • 1/2 tsp Baking Soda
  • 1 tsp Baking Pwdr
  • 1/2 c. Rice Flour
  • 1/2 c. Potato Flour
  • 1/4 c. Corn Meal pn Salt

Directions

  1. Place Lowfat milk, Large eggs and Oil in Blender. Blend at low speed. Add in Sugar and Dry Ingredients. Pour 6" rounds into greased skillet or possibly non-stick pan. Flip when bubbles appear through out and edge of `cake looks dull. Add in more lowfat milk for thinner pancakes or possibly more flour for thicker ones.
