Ingredients Convert Measures
- 2 tbsp olive oil
- 3 garlic cloves, finely chopped
- 2 tbsp ginger root, finely sliced in strips
- 1/2-1 Serrano chilli, sliced
- 4 chicken thighs or 4 breasts, skinned and cut into bite size
- 1 tbsp fish sauce or season to taste
- 1 pinch of salt
- 2 tsp sugar
- 1 small bunch of cilantro, roughly chopped
- ground pepper
- jasmine rice
Directions
- Heat up wok or pan and add olive oil. Add garlic, ginger and chillies, and stir-fry until golden. Add the chicken and toss for 1-2 minutes.
- Stir in the fish sauce, salt, and sugar, and stir-fry for another 4-5 minutes or until cooked. Season with pepper and add fresh cilantro. Transfer chicken to dish and garnish with the remaining cilantro.
- Serve hot with jasmine rice.
