Ingredients

  • 1 c. Minced, seeded bell pepper
  • 3 c. Peeled, seeded, minced tomatoes
  • 1 c. Peeled, seeded, minced cucumber
  • 1/2 c. Minced red onion
  • 1/4 c. Sliced celery
  • 1/4 c. Minced cilantro leaves
  • 1 tsp Minced garlic
  • 2 Tbsp. Extra virgin olive oil
  • 2 Tbsp. Cidar vinegar
  • 1 Tbsp. Lime juice
  • 1/2 tsp Paprika
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1/4 tsp Cumin
  • 1/8 tsp Caynne pepper
  • 1 1/2 c. Tomato juice

Directions

  1. Here is a wonderful cool soup which is perfect for the 9 days as well as all summer long.
  2. Restaurant in New York City. I found it in a copy of the Washington Post sometime last year.
  3. garnish with fresh dill and/or possibly cilantro leaves. Serve in chilled plates.
  4. The recipe can be expanded to suit your needs.
