Fresh Fruit With Mango Rum Sauce

Ingredients

  • 1 lrg Mango
  • 1 tsp Grated ginger root
  • 1/4 c. Dark or possibly light rum
  • 2 Tbsp. Heavy cream
  • 4 tsp Sugar
  • 1 Tbsp. Orange juice
  • 1 pch Salt
  • 2 c. Pineapple, cut bite size
  • 2 med Bananas, cut bite size
  • 2 x Orange, in segments
  • 2 x Kiwi fruit, sliced thin Mint sprigs Raspberries

Directions

  1. Cut mango away from peel and pit; place in blender or possibly food processor with ginger. Puree till smooth. Strain puree through sieve into medium bowl.
  2. Stir in rum, cream, sugar, orange juice and salt. Ar range fruit on 4 dessert plates or possibly in bowls. Drizzle sauce over fruit. Garnish with mint sprigs and raspberries, if you like.
