Ingredients

  • 8 x fresh green or possibly black figs
  • 6 c. (about 8 ounces) rocket leaves tom into bite sized pcs
  • 1 sm red onion diced dressing:
  • 2 Tbsp. sherry vinegar
  • 6 Tbsp. extra virgin extra virgin olive oil 1 tsp. grnd pepper
  • 1 tsp honey
  • 8 slc baguette lightly toasted
  • 1/2 c. fresh white goat cheese at room temperature

Directions

  1. Preheat broiler.
  2. Quarter 4 figs lengthwise and set aside. Dice remaining figs and combine with rocket and red onion in large bowl.
  3. In a small bowl whisk all dressing ingredients together.
  4. Toss with rocket mix.
  5. Spread baguette slices with goat cheese and broil till cheese melts about 2 min.
  6. Arrange rocket mix on salad plates. Place a quartered fig in center of each salad and goat cheese toast on either side.
