Ingredients

  • 1 can Field peas
  • 1 med Onion, minced
  • 1/2 c. Veg. oil Salt & pepper to taste
  • 1 c. Long grain rice, rinsed and liquid removed
  • 1 x (12-ounce) link Polish sausage

Directions

  1. Slice sausage in 1/2 inch pcs and brown in warm oil. Remove sausage and hold aside. Brown rinsed and liquid removed rice in this oil, on medium heat.
  2. Using a spatula lift brown rice from bottom of pot. Add in onion; cook for about 2 min. Then add in liquid removed peas (reserve liquid) and add in the sausage slices. Mix. Add in liquid plus sufficient water to equal 1 c.. Stir, season and cover tightly. Lower burner to low setting and cook covered for about 45 min.
