Ingredients Convert Measures
- 1 pound string beans, young
- 3/4 c. oil
- 1/4 c. pork, slivered
- 2 tbsp. dry shrimp, minced finely
- 1/2 c. warm water
- 4 tbsp. Szechuan pickled mustard greens, chopped
Directions
- Remove ends of string beans. Cut into 3 inch lengths. Heat wok. Add in oil. Just before oil starts to smoke, add in string beans. Fry 3 to 4 min. Remove. Drain string beans. Using the same wok, pour off all but 1 Tbsp. of oil. Stir-fry the grnd pork till cooked. Add in pre-softened dry shrimp that had been soaked in warm water and strained. Stir-fry. Add in pickled mustard greens. Stir-fry greens for about 1 minute. Return string beans to wok. Mix everything. Sprinkle with sesame oil. Serve.
