Diabetic, Low Fat Chunky Mushroom Sauce

Ingredients

  • 1/4 lb sliced mushrooms
  • 1/2 clv garlic
  • 1 tsp butter
  • 2 tsp cornstarch
  • 1 c. low sodium beef broth
  • 1/4 tsp salt and pepper, (combined)
  • 2 x green onions, minced

Directions

  1. Add in all ingredients except cornstarch and broth to a microwaveable bowl.
  2. In a small bowl mix cornstarch and broth till well combined.
  3. Pour over vegetable mix.
  4. Cover and microwave on high for 3 min, stir.
  5. Microwave another 3 min or possibly till mushrooms are tender and sauce is transparent.
  6. Use as a topping for meat, chicken or possibly even potatoes.
  7. Makes 2 servings.
  8. Exchanges...1/2 lean meat...1 veggie...1/2 fat.
