Ingredients

  • 400 gm chicken cut into bite-size pcs
  • 3 x shallots--smash lightly
  • 2 x cloves of garlic smash lightly
  • 15 x curry leaves
  • 2 x pandan leaves cut into 5cm lengths
  • 1 Tbsp. chilli pwdr
  • 1/2 tsp turmeric pwdr
  • 1 tsp coriander pwdr
  • 1 tsp minced Chinese parsley roots
  • 1/8 tsp grnd black pepper
  • 1 Tbsp. light soy sauce
  • 1 Tbsp. sugar
  • 1 Tbsp. Nampla fish sauce

Directions

  1. Method:Combine spice ingredients with the shallots, garlic, curry leaves and pandan leaves. Stir to mix thoroughly. Add in chicken pcs and blend well. Store in a clean plastic container in the refrigerator to marinate for 3 to 4 hrs, preferably overnight.
  2. Heat oil in a wok, then add in the chicken pcs, curry leaves and pandan leaves to deep-fry till chicken is cooked and tender. Dish out, drain well and serve.
