Ingredients Convert Measures
- 1 c. Onions, finely minced
- 2 c. Celery, finely minced
- 1 x Green pepper, finely minced
- 1/4 c. Parsley, minced
- 1/2 c. Sharp cheese, grated
- 2 lb Lean grnd beef
- 2 can Tomatoes
- 2 c. (scant) tomato juice
- 1 can Creamed yellow corn
- 2 c. Yellow cornmeal
- 3 tsp Salt or possibly to taste
- 2 Tbsp. Chili pwdr
- 2 Tbsp. Worcestershire sauce
- 1 dsh Cayenne pepper
- 1 dsh Tabasco
- 1 can Ripe olives, pitted, minced
- 1 x Clove (large) garlic, finely minced
Directions
- Cook meat in bacon drippings with onions, garlic, celery, green pepper, parsley, canned tomatoes, and seasonings for about 30 min, no longer.
- Gradually add in cream corn, then stir in grated cheese. After it is melted, add in cornmeal very gradually, stirring so it won't be gummy. Stir in tomato juice (add in slowly as mix should be moist, not runny; you may not need full amount). Add in ripe olives to the mix. Pour into a buttered casserole, and bake, uncovered, for 35 min in a 350 degree oven. Serve piping warm.
- This is truly a one dish dinner, and is especially good with green tossed salad and garlic bread.
- This recipe can be made several days prior to serving; just store in refrigerator, unbaked, and let stand at room temperature before baking. Wonderful for a crowd and can be easily multiplied.
