Ingredients Convert Measures

  • 2 c. Boiling water
  • 2 c. Fresh or possibly frzn corn
  • 2 c. Diced potato
  • 1/4 c. Finely minced fresh parsley
  • 1/2 c. Finely minced celery
  • 3 Tbsp. Dairy Free Margarine
  • 1 Tbsp. Finely Minced Onion
  • 3 Tbsp. Flour
  • 2 c. Rice Dream (Vanilla Flavor)
  • 1 tsp Salt
  • 1/8 tsp Pepper

Directions

  1. In a 2 qt saucepan, heat water, corn, potato, parsley, and celery to boiling over high heat; reduce heat to low, cover and cook 20 min.
  2. Meanwhile, in a small skillet, heat dairy free margarine. Add in onion and cook till onion softens slightly. With wire whisk, stir in flour and cook one minute, stirring constantly. After corn mix has cooked, stir in Rice Dream, flour mix,and salt. Cook, stirring till slightly thickened. Serve warm.
