Directions

  1. Preheat oven to 350 degrees.
  2. In saute pan, quickly fry cumin in oil - do not overcook.
  3. In a separate bowl, beat eggs - I like to add about a tbsp of milk.
  4. Add eggs to saute pan and cook. After about 2 minutes, add cheese and mix thorougly.
  5. When eggs are cooked, turn off heat and add cilantro, salt and pepper
  6. Heat tortillas in oven for about 3 minutes. Remove and divide eggs into four serving and wrap inside the tortillas. Serve with your favorite hot sauce - feel free to use beans on the side!
