Ingredients

  • 2 cans black beans
  • 1 teaspoon garlic
  • 1 teaspoon cumin
  • 1/4 c. minced onion
  • 1 teaspoon extra virgin olive oil
  • 1 can minced Rotel tomatoes
  • 1 bay leaf
  • 2 (5 ounce.) pkg. Vigo yellow rice (Spanish flavor)

Directions

  1. Saute onion in extra virgin olive oil until clear in a large pan.
  2. Add in garlic, cumin, beans, tomatoes and bay leaf. simmer 30- 60 minutes.
  3. Serve over Vigo brand yellow rice prepared according to package instructions.
