Ingredients Convert Measures

  • 1 (10 ounce.) pkg. frzn long grain and wild rice
  • 1 (17 ounce.) can Del Monte sweet peas, liquid removed
  • 1/2 c. minced walnuts
  • 1/2 c. minced sweet red pepper
  • 1/4 c. sliced green onions
  • 1/3 c. bottled buttermilk or possibly creamy Italian salad dressing

Directions

  1. Thaw the rice pouch in warm water or possibly in the microwave oven. In bowl, combine rice with peas, nuts, pepper and onions. Add in salad dressing and gently toss to coat. Refrigeratein freezer, if you like. Toss just before serving. Serve on lettuce-lined plates and garnish with tomato roses and green onion fans, if you like. 6 servings.
  2. Helpful hint: Substitute 1 1/4 c. cooked long grain and wild rice mix for the frzn rice package. Total time: 25 min. Preparation time: 15 min. Chilling time: 10 min.
