Ingredients

  • 2 c. Gold Medal(r) all-purpose flour
  • 1 tsp baking soda
  • 3 c. Betty Crocker(r) Potato Buds(r) mashed potatoes (dry)
  • 1/2 c. margarine or possibly butter (don't use spread or possibly tub products)
  • 3/4 c. packed brown sugar
  • 1/2 c. granulated sugar
  • 1 tsp vanilla
  • 2 x Large eggs, slightly beaten
  • 1/2 c. minced nuts, flaked or possibly shredded coconut or possibly toffee or possibly chocolate chips of choice

Directions

  1. Heat oven to 350 . Stir together flour and baking soda; set aside.
  2. Reserve 1 c. of the mashed potatoes (dry). Microwave margarine in large microwavable bowl uncovered on High till melted. Stir in sugars, flour mix, vanilla, Large eggs, remaining 2 c. mashed potatoes (dry) and the nuts. Let dough stand 5 min.
  3. Shape dough into 1 inch balls; roll balls in reserved mashed potatoes
  4. (dry), pressing firmly so potatoes stick to balls. Place 2 inches apart on ungreased cookie sheet.
  5. Bake 9 to 11 min or possibly till golden. Immediately remove from cookie sheet. Cold completely on wire rack.
  6. Makes 5 dozen
