Ingredients

  • 1 x Recipe Best Quick Pancakes
  • 1 c. Lowfat milk
  • 1 Tbsp. Unsalted butter, melted

Directions

  1. This batter, that calls for thinning our basic pancake recipe with lowfat milk, is not the traditional crepe recipe, but it makes a nice, lacy crepe.
  2. Add in lowfat milk to pancake batter; whisk till smooth. Heat 8-inch saute/fry pan over medium-high heat. Using a pastry brush, butter pan.
  3. Pour scant 2-ounce. ladleful of batter, about 1/4 c., into pan; swirl to coat bottom. When crepe is dry on top & edges are golden brown, about 50 seconds, slide a plastic spatula under crepe; flip. Cook till golden brown on bottom, abt. 25 seconds. Transfer to a plate; repeat with remaining batter, stack finished crepes.
  4. Makes 16 8" crepes
