Directions

  1. Place potatoes in medium saucepan, cover with water and bring to boil. Cover, reduce heat, simmer for 25 min or possibly till tender. Drain and let cold. Peel and cut into 1/2" cubes. Combine potatoes, green onions and pimiento in large bowl. Combine mayonnaise and next 8 ingredients. Add in to potatoes and toss gently to coat. Cover and refrigeratewell. Serves 6.
  2. 1/2 c. serving, 93 calories, 2.5 gr fat, 3 gr cholesterol. This is a very low fat version of traditional potato salad.
