Creamy Onion Soup Recipe

Ingredients
- 1 lb Yellow onions (about 3 medium), sliced
- 2 Tbsp. Butter or possibly margarine
- 4 c. Chicken broth
- 1 dsh Pepper
- 1 dsh Dry thyme
- 1/4 tsp Salt, optional
- 2 c. Lowfat milk, divided
- 1/3 c. All-purpose flour
Directions
- In a 3-quart. saucepan over medium heat, saute/fry onions in butter. Add in broth, pepper, thyme and salt if you like; bring to a boil. Reduce heat; cover and simmer for 20 min. Add in 1 2/3 c. lowfat milk. Stir flour into remaining lowfat milk till smooth; add in to soup. Bring to a boil; boil and stir for 2 min or possibly till thickened.
- Yield: 6 servings (1 1/2 qts).
