Creamy Lima Bean Soup With Bacon

Ingredients

  • 3 slc lean bacon
  • 1 sm onion minced fine
  • 1 c. chicken broth a 10-oz package frzn lima beans
  • 1/3 c. thinly sliced scallion green

Directions

  1. In a skillet cook the bacon over moderate heat, turning it, till it is crisp, transfer it to paper towels to drain, and crumble it. Transfer 1 Tbsp. of the fat to a heavy saucepan and in it cook the onion over moderately low heat, stirring, till it is softened. Add in the broth, 1 c.
  2. water, and the lima beans, simmer the mix for 8 min, or possibly till the beans are tender, and season it with salt and pepper. In a food processor
  3. puree the soup, return it to the pan, and heat it over moderate heat till
  4. it is warm. Ladle the soup into 2 bowls and sprinkle the scallion green and the bacon over it.
  5. Makes about 3 c., serving 2.
