Ingredients Convert Measures
- 3 Tbsp. Butter
- 3 Tbsp. Flour
- 2 c. Lowfat milk
- 1/2 tsp Salt
- 2 x Green onions, minced
- 1 can Sliced Mushrooms, Liquid removed, (2 1/2 oz)
- 1 jar Pimentos, Minced, (2 1/2 oz)
- 1 can White chunk chicken, (2 1/2 oz) diced
- 1 c. Jack cheese, shredded
- 1 x Avocado, sliced, for garnish
Directions
- Place butter in a medium size bowl. Microwave at high (1 00%) till melted, 30 to 45 seconds. Stir in flour. Blend in lowfat milk Microwave at medium high
- (70%) till slightly thickened, 5 to 6 min, stirring twice during cooking time. Add in remaining ingredients, except avocado, mixing well.
- Microwave at medium high (70%) till warm and bubbly, 3 to 4 min. Serve over toast points. Garnish with avocado.
- Makes 4 to 6 servings.
- NOTE: 11/2 c. left-over chicken may be used.
