Cranberry, Feta And Roasted Walnut Salad

Ingredients

  • 1 pkt (10 ounce.) mixed salad greens
  • 1 c. sweetened dry cranberries
  • 1 pkt (4 ounce.) Athenos Crumbled Feta Cheese
  • 1/2 c. coarsely minced toasted California walnuts
  • 2 Tbsp. balsamic vinegar
  • 1 Tbsp. honey
  • 1 tsp Dijon mustard
  • 1/4 tsp grnd black pepper
  • 1/4 c. extra virgin extra virgin olive oil

Directions

  1. Layer salad greens, cranberries, cheese and walnuts in shallow salad bowl or possibly on large serving platter. Whisk vinegar, honey, mustard and pepper in small bowl. Slowly add in oil in a thin stream, whisking constantly till well blended. Pour over salad. Toss gently to coat. Serve immediately.
