Cranberry And Vodka Sorbet

Ingredients

  • 450 gm Cranberries
  • 150 ml Unsweetened cranberry juice
  • 225 gm Caster sugar
  • 5 Tbsp. Vodka
  • 2 x Egg whites Juice from 2 oranges

Directions

  1. Place the cranberries, cranberry juice, orange juice and caster sugar in a large bowl. Bring to the boil, cover and simmer for 10 min till the sugar has dissolved and the cranberries are tender.
  2. Carefully place half the cranberry liquid into a food processor and puree the fruit.
  3. Place the puree mix into a plastic container suitable for the freezer and add in the other half of the cranberry liquid. Freeze for 2-3 hrs till slushy, then remove from the freezer. Place into a bowl and add in the vodka. Whisk the egg whites till stiff, then fold into the cranberry slush.
  4. Pour back into a container and freeze overnight.
