I am about to make this today this recipe was handed down to me by my grandma, and is used all over the high country, taken out to the workers at least 3 times a day. Please excuse my measurements asI have allways made this by heart.You can play around with the fruitI use lemons limes, oranges in different quantities depending on what flavour I am aiming foR, enjoy.

Ingredients Convert Measures

  • grated rind and juice of 3 lemons
  • grated rind and juice of 6 oranges
  • 4 Lb sugar
  • 1 tablespoon of epsom salts
  • 1 tablespoon citric acid
  • 2 tablesppons tartaric acid
  • 3 pints of boiling water

Directions

  1. As for directions you will find what best suites you, but I get a big plastic bin and put the rind and juice in the bin. Then I boil the water on stove and add the sugar until dissolved. put the syrup in the bin and add the rest of the ingredients give a good stir cover and leave in a cool place for 24 hours. then strain through muslin cloth and bottle. I prefer plastic bottles as this can be frozen until needed but must be kept in fridge at all other times after taken out of freezer
