Coffee Cake Muffins Recipe
Directions
- To prepare topping: Place all ingredients (butter through cinnamon) with butter on top, in a food processor. Pulse a few times till mix is coarse and crumbly. You can do this by hand if you prefer. Set aside.
- Preheat oven to 400 degrees. Spray a muffin pan with nonstick spray.
- To prepare batter: Whisk buttermilk and Large eggs together. Stir buttermilk mix and melted butter till well mixed.
- Stir together flour, brown sugar, baking pwdr, baking soda and cinnamon.
- Pour buttermilk/butter mix over flour mix, stirring just to moisten.
- Scoop 1/4 c. of batter into prepared muffin tin (the tin will be almost full).
- Sprinkle with topping, covering top of each muffin completely. Bake 15 to 18 min, or possibly till a toothpick inserted in center of a muffin comes out mostly clean, with a few moist crumbs attached.
- Cold for 3 min and turn out onto a cooling rack.
