Ingredients Convert Measures
- 1 box cake mix (your choice, yellow or possibly white preferable)
- 1 can sweetened condensed lowfat milk
- 1 can Coco Lopez (or possibly similar) coconut lowfat milk (located in the drinks section of store, used for making tropical drinks)
- 2 c. coconut, flaked, reserve 1/2 c.
- 1/2 c. nuts, minced
- 1 x 8 ounce. Cold Whip or possibly whipped cream
Directions
- Bake cake as directed in a 13 x 9 inch pan. While cake is cooling, take a fork an poke holes in it. In a non stick pot, mix the sweetened condensed lowfat milk and the coconut lowfat milk. Heat till it begins to boil.
- Drizzle it over the baked cake. Throw the 1 1/2 c. of flaked coconut and nuts on top of the cake. When the cake has cooled completely, frost with the whipped topping and throw on the remaining 1/2 c. of coconut.
- BTW, both of these ARE better than their namesake.
