Ingredients Convert Measures

  • 1 c. yellow or possibly white cornmeal, preferably stone grnd
  • 1/4 c. flour
  • 1 Tbsp. sugar
  • 1 1/4 tsp baking pwdr
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 c. soy lowfat milk or possibly water
  • 1 lrg egg, beaten
  • 1/8 c. vegetable oil, preferably sunflower

Directions

  1. Whisk cornmeal, flour, sugar, baking pwdr, baking soda and salt. Make a well in the center. Whisk soy lowfat milk, egg and oil in another bowl. Pour into well. Stir just till moistened.
