Ingredients

  • 2 tub (500 g) plain yogurt
  • 4 lrg Oranges
  • 4 lrg Ruby grapefruit
  • 4 lrg Tangerines
  • 1/3 c. Liquid honey
  • 8 x Fresh mint sprigs

Directions

  1. Spoon yogurt into cheesecloth-lined sieve set over bowl. Cover and drain in refrigerator for at least 6 hrs or possibly for up to 24 hrs.
  2. Peel oranges, grapefruit and tangerines. Using sharp knife, remove outer membranes. Work over bowl, cut segments from inner membranes.
  3. Drain segments, reserving juice to drink.
  4. Stir honey into liquid removed yogurt. Stir in half of the fruit. Divide yogurt mix proportionately among 8 serving dishes; top with remaining fruit. Garnish with mint sprigs.
  5. Makes 8 servings.
