Ingredients Convert Measures
- Filling
- 1/3 cup toasted bread crumbs or panko crumbs
- 1/3 cup brown sugar
- 1 Tbsp vegetable oil
- 1 tsp vanilla
- 1 ½ tsp cinnamon
- 1/3 cup chocolate">chocolate chips or chopped chocolate
- Cake
- ¾ cup vegetable oil
- 2 cups granulated sugar
- 3 eggs
- zest of one orange
- 1 cup fresh orange juice
- 1 tbsp vanilla
- 3 cups all purpose flour (or use 1 cup white wheat and 2 cups all purpose)
- ½ tsp salt
- ½ tsp cinnamon
- 2 ½ tsp baking powder
- 1 tsp baking soda
Directions
- Preheat oven to 350 degrees. Grease a 9 x13 cake pan.
- Filling – combine all the ingredients in a food processor and grind for a minute, or until blended and coarse crumbs are formed. It’s okay to have a few whole chips. Set aside.
- Cake - In a large bowl whisk together the oil, sugar, eggs, zest, orange juice, and vanilla. In a separate bowl whisk the flour, salt, cinnamon baking powder and salt. Fold the dry ingredients into the wet ingredients until well blended.
- Pour all but about ½ cup of the batter into the cake pan. Sprinkle the filling evenly over the top of the cake. Do not let too much filling pile up in the center of the cake or else it will sink. Spoon or pour the remaining batter over the cake. It will not cover it completely.
- Bake for about 40-50 minutes, or until the top is firm to the touch and moist crumbs stick to a toothpick inserted in the middle.
- Let the cake cool in the pan on a rack.
