Cinnamon Orange Crumb Cake Recipe by Farrell Podgorsek.

This cake has such a wonderful combination of flavors. It also holds well. The orange flavor is very mild but it enhances the cinnamon and touch of chocolate. It is simple and quick to put together.

Directions

  1. Preheat oven to 350 degrees. Grease a 9 x13 cake pan.
  2. Filling – combine all the ingredients in a food processor and grind for a minute, or until blended and coarse crumbs are formed. It’s okay to have a few whole chips. Set aside.
  3. Cake - In a large bowl whisk together the oil, sugar, eggs, zest, orange juice, and vanilla. In a separate bowl whisk the flour, salt, cinnamon baking powder and salt. Fold the dry ingredients into the wet ingredients until well blended.
  4. Pour all but about ½ cup of the batter into the cake pan. Sprinkle the filling evenly over the top of the cake. Do not let too much filling pile up in the center of the cake or else it will sink. Spoon or pour the remaining batter over the cake. It will not cover it completely.
  5. Bake for about 40-50 minutes, or until the top is firm to the touch and moist crumbs stick to a toothpick inserted in the middle.
  6. Let the cake cool in the pan on a rack.
