Ingredients Convert Measures

  • For the cake:
  • 2 cups stout (guinness)
  • 4 sticks unsalted butter
  • 1.5 cups cocoa powder (unsweetened)
  • 4 cups all purpose flour
  • 4 cups sugar
  • 1 tbs baking soda
  • 1.5 tps salt
  • 4 large eggs
  • 1.33 cups sour cream
  • For the buttercream frosting:
  • 4 sticks (2 cups) butter
  • 8 cups icing sugar
  • 1 or 2 tps cocoa

Directions

  1. Preheat over to 350 0F.
  2. Butter three 8-inch round cake pans with 2 inch-high sides.
  3. Line with parchment paper. Butter paper.
  4. Bring 2 cups stout and 4 sticks butter to simmer in heavy large saucepan over medium heat.
  5. Add cocoa powder and whisk until mixture is smooth. Cool slightly.
  6. Whisk flour, sugar, baking soda, and 1.5 tps salt in large bowl to blend.
  7. Using electric mixer, beat eggs and sour cream in another large bowl to blend.
  8. Add stout-chocolate mix to egg mix and beat just to combine.
  9. Add flour mix and beat briefly on slow speed.
  10. Using rubber spatula, fold batter until completely combined.
  11. Divide batter equally among prepared pans. Bake cake until tester inserted into centre of cakes comes out clean, about 35 mins.
  12. Transfer cakes to rake, cool for 10 mins then turn cakes out onto rack and cool completely.
  13. For the buttercream frosting:
  14. Warm the butter to room temperature or microwave for 5 to 10 seconds so it's easy to work with.
  15. . Mix butter with icing sugar and cocoa powder.
