Chinese Vegetabes With Mushrooms And Oyster Sauce

Ingredients

  • 1 bn chinese green vegetables (bok choy choy sum gai larn)
  • 8 x dry chinese black mushrooms soaked
  • 2 Tbsp. vegetable oil
  • 2 Tbsp. oyster

Directions

  1. Thoroughly wash the vegetables and drain well.
  2. Cut of thick stalks as these require longer cooking.
  3. Trim stems from mushrooms squeeze water from caps.
  4. Simmer in lightly salted water for 5 min then drain.
  5. Plunge the vegetable stems into boiling water to cook for 12 min.
  6. Remove then briefly blanch the leafy parts and drain well.
  7. Toss vegetables and mushrooms in oil over moderate heat until well coated.
  8. Serve dressed with oyster sauce.
  9. Hint. Canned straw mushrooms or possibly champignons can replace theblack mushrooms.
  10. Serves 4
