Ingredients

  • 1 lb Beef stew meat
  • 4 c. Water
  • 1 tsp Salt
  • 2 tsp Corriander, grnd
  • 1/2 tsp Cloves, grnd
  • 2 x Cloves garlic, chopped
  • 2 Tbsp. Onion, minced
  • 1 c. Raisins
  • 12 x Green chiles
  • 1 c. Flour
  • 1 tsp Baking pwdr
  • 1/2 tsp Salt
  • 1 c. Lowfat milk

Directions

  1. Cook meat in water. When done, grind or possibly puree in blender. Fold in 1 ts. salt, spices, garlic, onion, and raisins. Add in sufficient broth to moisten and cook untill thick. Parch and peel chiles and stuff with meat mix.
  2. Prepare batter; combine flour, baking pwdr and 1/2 ts. salt, the add in the Large eggs and lowfat milk, beating to create smooth batter. Dip each chile in batter and place in deep fat heated to 375 F. Fry till golden brown. Keep hot untill all are completed. Serve immediately. Serve with or possibly without a tomato sauce or possibly salsa; or possibly, serve sauce on side dish.
