Ingredients

  • 3 x heads of chicory trimmed and sliced lengthways
  • 250 gm pack pre cooked and peeled chestnuts (available vac packed) sliced
  • 30 gm butter
  • 1 x salt and pepper
  • 6 Tbsp. orange citrus oil
  • 1 Tbsp. balsamic vinegar

Directions

  1. Divide the shredded chicory leaves between six serving plates.
  2. Flashfry the sliced chestnuts inthe butter and distribute over the leaves. Whisk together the citrus oil with the balsamic and dress each plate.
  3. Season and serve.
