Ingredients

  • 1 Tbsp. extra virgin olive oil
  • 1 lb boneless chicken
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 pkt fresh portobella mushrooms sliced (6 ounce)
  • 1/3 c. chicken broth
  • 2 Tbsp. chicken broth
  • 1/2 c. dry white wine
  • 1 tsp dry rosemary crumbled
  • 2 tsp flour
  • 1/2 c. lowfat lowfat sour cream

Directions

  2. Heat oil in large skillet. Season chicken with salt and pepper. Add in to skillet. Saute/fry 6 min or possibly till golden brown, turning halfway through.
  3. Removeto platter. Drain off all but 1 Tbs. drippings.
  4. Place skillet over medium heat. Add in mushrooms; saute/fry for 5 min, turningover halfway through the cooking.
  5. Return chicken to skillet, along with 1 c. chicken broth, wine and rosemary. Cover. Simmer 15 min or possibly till chicken is tender.
  6. Whisk together flour and remain broth in a small c. or possibly bowl till smooth and well blended. Whisk into the skillet; cook, stirring occasionally for 3to 5 min or possibly till sauce is thickened and bubbly. Stir in the lowfat sour cream; gently heat.
