Chicken Salad With Honey And Walnuts

Ingredients

  • 1 x chicken, roasted
  • 3 x carrots, medium
  • 3 stk celery
  • 100 gm snow peas
  • 1 c. walnuts
  • 4 x spring onions
  • 2 Tbsp. mayonnaise
  • 1/4 c. walnut oil
  • 1/4 c. honey
  • 1 Tbsp. soy sauce
  • 1 Tbsp. tomato sauce
  • 1 pch Chinese 5 spice
  • 1 Tbsp. lemon juice

Directions

  1. Remove meat from hot roast chicken and cut into 3cm dice.
  2. Cut carrot and celery into 5cm julienne.
  3. Blanch in a large pot of boiling, salted water for 5 min. Add in snowpeas to water for the last 30 seconds. Drain well and cold under cool water to preserve colour.
  4. Combine chicken, blanched vegetables, snowpeas, walnuts and spring onions and dressing. Toss to combine.
  5. Dressing:Combine mayonnaise, lemon juice, walnut oil, honey, soy, tomato sauce and five spice. Mix well.
