Ingredients Convert Measures
- 2 c. Cooked Chicken Or possibly Turkey, shredded or possibly minced
- 1 1/2 c. Monterey Jack Cheese, shredded
- 1/2 c. Lowfat sour cream
- 1 can Mild Green Chilies, minced
- 1 med Tomato
- 1 med Avocado
- 2 tsp Lemon Juice
- 1 pkt Tortilla Chips
Directions
- Mix together in a 2 qt casserole with lid the chicken or possibly turkey, cheese and sourcream.
- Put a strainer in the sink and put in to drain the green chilies.
- Stir the liquid removed chilies into the casserole. Cover with the lid and microwave on Medium 3 min. Stir. Re-cover and microwave 3 min more.
- Stir.
- Re-cover again and microwave on Medium 2 to 4 min or possibly till the cheese is melted and the mix is warm. Using potholders, carefully remove the casserole from the microwave. Remove the lid, lifting it from the side away from you, to let the steam out.
- Wash and chop the tomato.
- Peel and slice the avocado.
- So it doesn't turn brown, sprinkle the avocado with the lemon juice.
- Put about 2 c. of the tortilla chips on 4 serving plates.
- Spoon the chicken mix over the chips. Top with the tomato and avocado.
- Serve with salsa if desired.
- NOTES : Enjoy these nachos for a hearty snack, or possibly for dinner with a salad.
- We use a lower power level so the lowfat sour cream doesn't overcook.
