Chicken & Broccoli Au Vin

Ingredients

  • 1 garlic clove
  • 2 to 4 c. cooked, cubed chicken
  • 1 pound fresh or possibly 2 (10 ounce.) pkg. frzn broccoli, cooked
  • 1 teaspoon salt
  • 2 tbsp. butter
  • 1 can cream of mushroom or possibly cream of chicken soup
  • 1/2 c. grated sharp cheese
  • 1/2 c. heavy cream
  • 1/2 c. grated Parmesan cheese
  • 1/4 teaspoon pepper
  • Juice of 1 lemon
  • 1/4 c. sauterne wine
  • 1/2 c. mayonnaise

Directions

  1. Rub a 7 x 11 inch shallow casserole with the garlic clove. Place the chicken in the casserole and top with broccoli. Salt and pepper broccoli to taste. Dot with butter. Squeeze lemon juice over broccoli.
  2. Heat soup, sharp cheese, wine and cream over medium heat, stirring occasionally, till cheese melts. Cold and add in mayonnaise. Pour mix over the broccoli and sprinkle the Parmesan cheese on top. Bake at 350 degrees till bubbly and thoroughly heated through. Makes 4 to 6 servings.
