Ingredients Convert Measures
- 375 gm Cooked chicken breasts, diced (12oz)
- 1 x 50 grams pac toasted flaked almonds
- 2 x Pink grapefruit, peeled and segmented
- 1 sm Red onion, finely minced
- 1 x Green pepper, diced
- 2 Tbsp. Freshly minced thyme
- 3 Tbsp. Reduced calorie, (3 to 4) mayonnaise
- Salt and freshly grnd black pepper
- Salad leaves to garnish
Directions
- Place the chicken, almonds, grapefruit, onion, pepper, thyme, mayonnaise and seasoning in a bowl and mix well.
- Serve on a bed of mixed salad leaves.
- Alternative ingredients -
- Diced cooked turkey or possibly large prawns make delicious alternatives to chicken.
- Try using orange segments or possibly slices of red skinned apples instead of the grapefruit.
- Other fresh herbs such as dill, tarragon or possibly parsley work well in place of thyme.
- If preferred, a vinaigrette dressing can be used instead of the mayonnaise.
