Ingredients

  • 20 lbs potato wedges
  • 1/4 cups salt
  • 1/4 cups pepper
  • 1/2 cups Vegelene spray or olive oil
  • 4 lbs shredded Cheddar chesse

Directions

  1. On parchment lined sheet pan, lay out the potatoes, spray with vegetable spray, and dust with salt and pepper.
  2. Roast in 350 oven for about 15 minutes until par-baked.
  3. Transfer to hotel pan sprayed with vegetable spray and arrange in shingle fashion so portioning and service are easier.
  4. Spinkle with cheddar cheese and BATCH finish cooking to ensure quality of product.
  5. Should take 15 minutes at 350.
