Caramelized Pear & Cranberry Crisp

Ingredients

  • 4 Bartlett Pears
  • 1/2 cup Dried Cranberries
  • 1/2 stick unsalted butter
  • 6 Shortbread cookies
  • one tablespoon light brown sugar
  • dash of cinnamon
  • dash of nutmeg
  • 1/4 stick cold butter (cut)
  • dash of salt

Directions

  1. Melt butter in a skillet, peel and cut pears and saute 20 minutes until caramelized and tender, lower heat (simmer), add dried cranberries and cook 6 minutes
  2. Transfer to a prepared baking dish
  3. Crumble shortbread cookies, add cinnamon, nutmeg, salt, butter pieces and using a pastry cutter or fork crumble
  4. Sprinkle on top of fruit and place into a 325 F oven and bake 8 minutes
  5. Serve with Vanilla Ice Cream
