Ingredients

  • (South African)
  • 1 Tbsp. Cloves
  • 2 Tbsp. Black peppercorns
  • 1/2 c. Coriander seeds
  • 3 Tbsp. Cumin seeds
  • 1 Tbsp. Fennel seeds
  • 1 Tbsp. Black mustard seeds
  • 1/4 c. Grnd cardamom
  • 1/4 c. Turmeric
  • 3 Tbsp. Grnd fenugreek
  • 1 Tbsp. Grnd ginger
  • 3 sm Dry warm red chilies (piquins or possibly santakas), seeds and stems removed

Directions

  1. In dry skillet, separately toast cloves, peppercorns, coriander, cumin, fennel, and mustard seeds on medium heat, taking care not to burn. Mix toasted items and chilies in spice mill; grind to a fine pwdr. Mix with the rest; mix till uniform color is achieved. Store in airtight container.
  2. Makes med warm currypowder.
