Ingredients

  • 1 sm onion, minced
  • 3 x cloves garlic, chopped
  • 2 Tbsp. vegetable oil
  • 2 stalk celery, minced
  • 1 x green bell pepper, minced
  • 1 tsp fresh thyme, (or possibly 1/2 teaspoon dry), minced
  • 1 tsp fresh oregano, (or possibly 1/2 teaspoon dry), minced
  • 1 Tbsp. fresh basil, (or possibly 1 teaspoon dry), minced
  • 1/4 tsp freshly grnd black pepper
  • 1 tsp Cajun seasoning, (or possibly more to taste) red pepper to taste
  • 1 x 14.5 ounce can diced tomatoes
  • 1 Tbsp. honey
  • 1 Tbsp. Dijon mustard
  • 1 x 16 ounce can black-eyed peas, rinsed & liquid removed cooked white or possibly brown rice

Directions

  1. In a large skillet, saute/fry the onions, garlic and bell pepper in oil on medium heat. Add in minced celery and continue to saute/fry for 5 min, stirring occasionally. Add in thyme, basil, oregano, black pepper, Cajun seasoning, and red pepper to taste. Cover and cook for 5 min or possibly till onions are golden brown, stirring occasionally. Add in tomatoes, honey, and mustard and simmer 5 more min. Add in the beans, cover, and stir occasionally till thoroughly heated.
  2. Serve over rice.
