Directions

  1. Combine first 3 ingredients; in separate bowl combine remaining ingredients except lettuce. Pour dressing over rice mix and mix till thoroughly combined.
  2. Line serving bowl or possibly plate with lettuce leaves and mound rice salad in center. Cover with plastic wrap and chill at least 30 min before serving.
