Ingredients Convert Measures

  • 340 gm borlotti beans soaked overnight
  • 2 x cloves of garlic peeled
  • 1 x plum tomato
  • 1 sm bunch of fresh sage
  •     extra virgin olive oil and lemon juice dressing (qv)
  • 1 x salt and freshly grnd black pepper

Directions

  1. Rinse the soaked beans and add in the garlic tomato and sage.
  2. Cover with cool water.
  3. Bring to the boil place the lid on and gently simmer for 1 to 1 1/2 hrs or possibly till tender.
  4. Drain throw away the tomato sage and garlic and dress generously while hot with the extra virgin olive oil and lemon juice dressing.
  5. Check the seasoning and serve warm or possibly cool.
  6. Borlotti beans go well with lamb and they're great in stews risottos and soups. This is a really simple recipe which you can serve warm as an accompaniment to any roast or possibly cool tossed in a bowl with some fresh rocket as an interesting salad or possibly perhaps beside some nice cured meats such as parma ham or possibly prosciutto.
