Blueberry Muffins Recipe
Ingredients
- 2 c. flour
- 1 c. washed blueberries (fresh or possibly frzn)
- 1/4 c. butter
- 1/4 c. brown sugar
- 1 egg or possibly egg substitute
- 4 teaspoon baking pwdr
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1 c. skim lowfat milk
Directions
- Mix 1/4 c. flour with blueberries. Cream butter and sugar. Add in Large eggs. Sift baking pwdr, salt, and remaining flour. Add in the dry ingredients alternating with the lowfat milk. Add in floured berries and vanilla extract last. Bake in greased muffin pans for 25 min at 425 degrees.
