Ingredients

  • 200 gm selfraisingflour sifted
  • 75 gm golden brown caster sugar
  • 2 med Large eggs
  • 4 Tbsp. sunflower oil
  • 4 Tbsp. lowfat milk
  • 200 gm blueberries
  • 125 gm quality white chocolate coarsely minced
  • 100 gm butter softened
  • 75 gm light muscovado sugar
  • 1 1/2 tsp grnd cinnamon
  • 75 x gplainflour Beat together the butter and sugar.

Directions

  1. Add in the cinnamon and flour and combine well.
  2. For the muffms:Mix the flour and sugar.
  3. Beat together the Large eggs oil and lowfat milk then add in to the flour combining gently but thoroughly.
  4. Stir in the berries and chocolate taldng care not to bruise the fruit.
  5. Spoon into 16 to 20 muffin cases.
  6. Using your fingers crumble the streusel mix over the top.
  7. Bake at 200C/400F/Gas Mark 6 for about 20 min till golden and risen.
  8. If you can find large Americansized muffm cases bake for 2 to 3 min longer.
  9. Makes 16 to 20
